Tonight I am going to make one of my favorite dishes for dinner. Vodka Cream Pasta. “You-Won’t-Be-Single-For-Long-Vodka-Cream-Pasta” to be exact. This is a recipe that I found years ago when I was hooked on Rachael Ray’s 30 Minute Meals episodes. She made this pasta dish and swore it would swoon your man into a marriage proposal (hence the name of the dish). At the time, I was just dating Brad Pitt and very much wanting a proposal. So I made the dish. It was delicious. But no proposal. So I made it again. And again. And again. Still, nothing. There were nights we would go out and I would think he was going to pop the big question, but nope. Nothing. Just disappointment.
So I decided to take matters into my own hands and tinkered with the recipe. It calls for one cup of vodka. I figured if one cup was supposed to trigger a proposal, surely more vodka would speed up the process. Every time I made the meal, I started adding more and more vodka. But no success. Eventually I emailed Rachael Ray explaining my predicament and asked how much extra vodka she would recommend. She obviously didn’t give two shits about my relationship because she never bothered to write back.
That’s okay. I could handle this on my own.
Short of drinking vodka straight from the bottle, I figured there was only so much I could add to the meal. So I just made the pasta all the time. To the point that Brad Pitt probably tired of it and figured if he proposed I would move on to a new recipe. Eventually he proposed and I laid off the pasta for awhile. In fact, too long. So that is why I’m making it tonight.
Here is the recipe. Its very easy to make. And besides adding a touch more vodka at times, I have a few other tweaks to the ingredients. I like to add crumbled goat cheese on top when I serve the dish. It adds a nice tangy flavor that compliments the sauce really nicely. If you’re not a fan of goat cheese, just use freshly shredded parm on top. To get some protein in the meal, I will sometimes prepare Italian sausage and serve on the side. Easy adjustments for an already easy meal. Hope you like it and if you’re aiming for a proposal, I hope you don’t go through too many bottles of vodka before you get there.
Oh, yeah, on the topic of the vodka … use a cheap vodka. Save the good stuff for cocktails.
